Gluten-Free, Nut-Free, Dairy-Free Protein Waffles
It’s no secret I have a sweet tooth, but I love when I can find something that feels a bit sinful to eat and figure out a recipe to make it healthier and allergy-free. After going gluten-free a few years ago waffles seemed like a breakfast item I could safely say goodbye to. Other than buckwheat, most waffles aren’t gluten-free and honestly, while delicious, are not particularly healthy. This changed after I discovered a recipe that was full of protein, and free of allergens: Power Protein Waffles! What I love about these waffles is how versatile they are, not to mention they only require three ingredients. You can use any protein powder or filling of your choice depending on your mood! My go-to recipes include Chocolate + Blueberry, Vanilla + Strawberry & Coconut, Chocolate + Banana, and Vanilla + Pineapple & Coconut.
The Allergy Free Wife’s Power Protein Waffles
1/2 Banana (should be a bit soft)
1/4 Cup Egg Whites
8 oz Chocolate or Vanilla Protein Powder of your choice, I love this nut-free one
1 Teaspoon of Cinnamon
Vanilla Extract (Optional)
Blueberries, Raspberries, Lemon Zest, Blackberries, Chopped Pineapple, Chocolate Chips, Chia Seeds, Coconut Flakes, Cocoa Nibs (Optional for flavored waffles)
Mash banana with fork
Add in egg whites, protein powder, cinnamon, and optional flavorings
Mix with hand blender for 20 seconds (make sure not to over mix, you don’t want the batter to be too thin)
Pour into waffle maker (if you don’t have a waffle maker you can always make these as pancakes!)
Once cooked, top with toppings of your choice!
